
Sweet and crunchy apples and celery combine with savory shrimp and nutty pecans in this easy, colorful dinner salad.
Ingredients
- 5 tablespoons reduced-fat sour cream or plain greek yogurt
- 3 tablespoons extra-virgin olive oil
- 3 tablespoons cider vinegar
- ¼ cup chopped fresh cilantro
- 1 tablespoon finely chopped shallot
- 1 clove garlic, minced
- ¾ teaspoon dry mustard
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
- 5 cups chopped romaine lettuce
- 1 pound cooked shrimp, chopped
- 1 medium red apple, chopped
- 1 cup chopped radicchio
- 1 cup chopped celery
- ½ cup toasted chopped pecans
- ½ cup shredded carrot
Directions
- Whisk sour cream (or yogurt), oil, vinegar, cilantro, shallot, garlic, mustard, salt and pepper in a large bowl. Add romaine, shrimp, apple, radicchio, celery, pecans and carrots; toss to coat.
