Simple and fresh pizza with ripe tomatoes, basil leaves, and mozzarella. A great summer pizza with garden-fresh ingredients.

Ingredients

  • 2 tomatoes, seeded and coarsely
  • chopped
  • 1 teaspoon salt
  • 8 ounces shredded mozzarella
  • cheese
  • 1 red onion, coarsely chopped
  • 1/4 cup chopped fresh basil
  • 1/2 teaspoon ground black
  • pepper
  • 2 tablespoons olive oil
  • 3 fresh jalapeno peppers,
  • chopped (optional)
  • 1/2 cup sliced black olives
  • 1/2 cup sliced fresh mushrooms
  • 1/2 cup pizza sauce
  • 2 (12 inch) pre-baked pizza crusts
  • 8 ounces shredded mozzarella
  • cheese
  • 1/4 cup grated parmesan cheese

Directions

  1. Mix the tomatoes and salt in a mesh strainer. Let mixture sit and
  2. drain for 15 minutes.
  3. Preheat oven to 450 degrees F (230 degrees C).
  4. Combine the drained tomatoes, 8 ounces of mozzarella cheese,
  5. onion, basil, pepper, olive oil, jalapenos, olives, and mushrooms in a
  6. bowl. Spread the pizza sauce evenly onto the pizza crusts.
  7. Distribute tomato mixture over the two pizza crusts evenly. Sprinkle
  8. 8 ounces of mozzarella cheese and the Parmesan cheese over both
  9. pizzas.
  10. Bake pizzas in preheated oven until cheese is completely melted, 8
  11. to 10 minutes.
