Ingredients

  • 2 ounces goat cheese (about 3 tablespoons)
  • 2 slices crusty whole-grain bread, toasted
  • 1 small heirloom tomato, sliced
  • 1 teaspoon extra-virgin olive oil
  • pinch of flaky sea salt
  • pinch of freshly ground black pepper
  • fresh basil for garnish (optional)

Directions

  1. Spread 2 ounces goat cheese evenly on 2 toast slices. Top each with half the tomato slices; drizzle with 1 teaspoon oil and season with a pinch each salt and pepper. Garnish with basil, if desired.
