Warm pork slices served over greens with a tangy dressing, crunchy toppings, and seasonal veggies—light yet satisfying.

Ingredients

  • 2 cups diced cooked pork 2 cups cooked rice
  • 1 (10.75 ounce) can condensed cream of chicken soup, undiluted 1 cup diced celery
  • 1/2 cup mayonnaise
  • 1 (4 ounce) can mushroom stems and pieces, drained
  • 1 tablespoon lemon juice
  • 1 tablespoon finely chopped onion 1/4 teaspoon salt
  • 1 cup cornflake crumbs 1/2 cup sliced almonds
  • 2 tablespoons butter, melted

Directions

  1. Combine the first nine ingredients; mix well. Spoon into an ungreased 11-in. x 7-in. x 2-in. baking dish. Combine crumbs, almonds and butter; sprinkle on top. Bake, uncovered, at 350 degrees F for 30-40 minutes or until lightly browned.
