
This simple slow-cooker mashed potatoes recipe skips tedious peeling and boiling and helps save precious stovetop space by letting the slow cooker do the work. Ingredients
- 4 pounds yukon gold potatoes, diced (1/2 inch)
- ¾ cup finely chopped shallots
- 3 large cloves garlic, peeled
- ½ cup water
- 1 ½ cups buttermilk, at room temperature
- ¼ cup unsalted butter, melted
- 1 ¼ teaspoons salt
- ½ teaspoon ground pepper
Directions
- Combine potatoes, shallots, garlic and water in a 5- to 6-quart slow cooker. Cook for 4 hours on High. Turn off the slow cooker; add buttermilk, butter, salt and pepper and mash until combined and almost smooth.
