This simple slow-cooker mashed potatoes recipe skips tedious peeling and boiling and helps save precious stovetop space by letting the slow cooker do the work. Ingredients

  • 4 pounds yukon gold potatoes, diced (1/2 inch)
  • ¾ cup finely chopped shallots
  • 3 large cloves garlic, peeled
  • ½ cup water
  • 1 ½ cups buttermilk, at room temperature
  • ¼ cup unsalted butter, melted
  • 1 ¼ teaspoons salt
  • ½ teaspoon ground pepper

Directions

  1. Combine potatoes, shallots, garlic and water in a 5- to 6-quart slow cooker. Cook for 4 hours on High. Turn off the slow cooker; add buttermilk, butter, salt and pepper and mash until combined and almost smooth.
